Sausage separation (or de-linking) is necessary if you want to package them in suitable portions for consumers. The Suhner Tender-Cut machines operate on a simple concept but are very effective. Hooks are spaced evenly throughout the drum, which is tapered upwards towards the feeding section. The drum rotates and distributes the linked sausages as they fall towards a small opening at the exit. As the sausage links are caught on the hooks, small cutting edges inside the hooks separate the sausages. The small exit only allows individual sausages through, as the linked sausages would still be hooked.
