Skinning and derinding machines perform their job by means of a toothed roller and a sharp blade. The teeth latch onto the undesirable and pull it towards the blade, which then separates the undesirable from the good parts. The undesirable is dragged under the blade by the roller, falling into a waste section.
Rollers vary in the number and aggressiveness of their teeth, with certain combinations being more suitable to different applications. Machines vary in size or skinning width to accommodate what needs to be processed. Automatic machines process flat products, whereas most round products still must be processed by “open top” manual work.
