The Fischer-Bargoin 6-P Sausage Pricker.

The sausage pricker is a tool that assists with the cooking of sausages. For use at home or in a commercial environment, they pierce the casing in order to remove air pockets. The removal of air pockets facilitates a better cooking experience.

Sausage prickers are ideal as the needle is thin enough to pierce but not cause tears in the casing. A knife and most other sharp points would create a tear.
